Quinoa Salad with Avocado

Yields: 4 people

Ingredients:

  • 1 cup quinoa
  • 1 ¾ cup vegetable stock
  • ½ red pepper, diced
  • ¼ cup roasted pumpkin seeds or slivered almonds
  • 1 ripe avocado, diced
  • ¼ cup good quality olive oil
  • 3 tablespoons lime juice (1 to 2 limes)
  • 1 teaspoon sea salt

Directions:

  1. Rinse quinoa and drain.
  2. Place in a saucepan with vegetable stock. Cover and bring to a boil.
  3. Reduce heat to medium-low. Let simmer for 10 minutes.
  4. Turn off heat and let remain covered for another 10 minutes until all water is absorbed.
  5. When quinoa is cool, add red pepper, seeds or nuts, and avocado.
  6. Combine olive oil, lime juice and salt. Toss with quinoa.
